Ingredients
- 1 packet lamington fingers (pack of 18)
- 600ml thickened cream
- ¼ cup icing sugar
- 1 tsp vanilla essence
- 3 tbsp strawberry jam
- 8 strawberries, roughly chopped
- 8 pieces Lindt chocolate squares, cut in half
- Mint, to garnish
METHOD
1. Whip the thickened cream until stiff with ¼ cup icing sugar and 1 teaspoon vanilla essence.
2. Put the cream in a piping bag or spoon the cream on one side of each of the lamington fingers.
3. Continue piping the cream and placing the lamingtons together into a wreath shape.
4. Drizzle over some store-bought strawberry jam and top with chopped fresh strawberries.
5. Add chocolate slices and fresh mint to garnish.
